Short answer: the lever group is bolted straight to the boiler, so heat soaks upward shot after shot until the group crosses ~105 °C and scorches the coffee. Two changes tame it – a PTFE-Thermo-Isolator (the “bong isolator”) between boiler and group, and lowering the Pressostat von ~1,2 bar auf 0,8-0,9 bar so the boiler runs cooler in the first place.

Chart showing La Pavoni group head temperature climbing past 105 degrees across consecutive shots in stock form, versus staying in the brew window with a PTFE isolator and lower pressurestat setting

Phase Gruppentemperatur Wie der Shot schmeckt
Shot 1 (richtiges Aufwärmen) ~86-92 °C Süß, ausbalanciert
Shot 2 ~95-100 °C Kippt ins Bittere
Shot 3+ 105 °C+ Azid, verbrannt
Nach 15-20 min Pause Erholt sich Wieder trinkbar

Kernaussage: The group is a heat sink bolted to a boiler – overheating is the design’s default behaviour, not a fault.

Was bewirkt der PTFE-Bong-Isolator?

The isolator is a PTFE (Teflon) spacer that replaces the metal-to-metal mounting interface between boiler and group. PTFE conducts heat dramatically worse than brass or steel, so instead of the group riding the boiler’s temperature, it warms gently and plateaus in a workable range. Owners report the practical shift shown in the chart above: three or four back-to-back shots staying inside the brew window instead of sailing into scorch territory. Installation happens during a group service – the group comes off the boiler, the isolator sits in the stack, seals go back on fresh. While you are in there, treat it as a full group service: gaskets, the piston seals, and a food-safe high-temperature silicone grease on moving parts – the same lubricant discipline we detail in the E61-Gruppen-Wartungsleitfaden applies to lever groups.

Kernaussage: One PTFE spacer turns the group from a boiler fin into a stable brew tool – the single best La Pavoni upgrade.

The pressurestat (pstat) switches the heating element on and off around a boiler pressure set point – factory-set near 1,2 bar on many La Pavonis. Boiler pressure and temperature are directly linked, so lowering the pstat to 0,8-0,9 bar drops boiler temperature by several degrees, which lowers the whole thermal stack: less aggressive steam, a cooler group equilibrium, and a wider window of good shots. The adjustment itself is a screw on the pstat – turn, watch the boiler gauge cycle point, test – but it is a live steam appliance: work carefully, in small steps, with respect for the pressure you are managing. If your machine has no gauge or you are unsure which pstat you have, that is service-territory rather than DIY-territory; the Wartungs-Guide covers gauge and safety basics.

Gauge diagram of La Pavoni pressurestat settings from the factory 1.2 bar down to the 0.8-0.9 bar sweet spot
Pstat-Einstellung Kessel-Verhalten Gruppen-Effekt
0,8 bar Etwas sanfterer Dampf Breitestes Shot-Fenster

Kernaussage: 0.8-0.9 bar is the sweet spot for espresso – most owners never miss the extra 0.3 bar of steam fury.

Three habits, all free. First, den ersten Shot 8-12 Minuten ziehen, nachdem das Heizelement erstmals abschaltet – the group needs time to soak, but the boiler is hottest right at cycle. Second, eine Abkühlspülung machen before later shots: lift the lever and let a second or two of water through to pull group temperature down, the same logic as cooling routines on electric machines. Third, Shots zeitlich auseinanderziehen – five to ten minutes apart keeps the stack out of the scorch zone entirely. And know the difference between routine overheat and a real fault: if steam hisses constantly or the gauge wanders, that is a pstat or safety-valve conversation, not a technique one – start at diagnostizieren Sie Ihre Espressomaschine. For how this platform compares with the other famous lever path, our Flair-58-Vergleich mit elektrischen Maschinen covers the tradeoffs of lever temperature control versus thermostated machines.

Kernaussage: Timing and flushes manage the symptom – the isolator and pstat setting cure the cause.

FAQ
