Flair 58 Temperature & Preheat Guide: Low, Medium or High?

The Flair 58 temperature controller is not a generic “hotter is better” control. Flair currently maps its three preheat levels to roast style: LOW for dark roasts, MEDIUM for medium roasts, and HIGH for light roasts.

Official starting point: dark → LOW; medium → MEDIUM; light → HIGH. Flair also recommends bringing brew water close to the temperature represented by the selected setting.

Why does preheating matter so much on a Flair?

Flair’s own temperature guidance says the stainless-steel brew head can rapidly absorb heat from incoming water if it is not preheated. That means kettle temperature alone is not the same thing as the temperature environment around the puck.

For the electric Flair 58, Flair recommends preheating with the lever raised and plunger at the top, and says it is good practice to keep the portafilter installed during preheat.

What water temperature should you start with?

Flair’s general guidance gives roughly 200–204°F / 93–96°C as a starting range, with darker roasts often working cooler—down toward roughly 195°F. This is a starting framework, not a fixed extraction law.

Should light roast always use HIGH?

HIGH is Flair’s recommended starting controller setting for light roast, but taste still decides the final recipe. If the coffee becomes harsh or drying, do not keep raising temperature simply because the roast is light.

Temperature is one variable. Grind, ratio, pressure profile and pre-infusion still affect extraction. Change one variable at a time.

What changes at high elevation?

Flair specifically warns that the HIGH setting can cause flash boiling at high elevation. Its current support guidance says to stay on MEDIUM in that situation. This is a real environmental exception and is why a temperature recommendation should not be copied without context.

How long should you wait for preheat?

Wait until the controller indicates the selected level is ready. Older Flair 58 documentation notes the initial LOW preheat can take up to about 10 minutes, while stepping between levels after the system is hot can be much faster. Use the controller’s ready indication rather than inventing one universal timer for every revision.

Flair 58 temperature decision table

Coffee / condition Starting controller setting What to watch
Dark roast LOW Harshness / roast bitterness
Medium roast MEDIUM Balance and sweetness
Light roast HIGH Sourness vs dryness
High elevation + flash boiling risk MEDIUM Boiling / unstable fill
